Recent Eats and Other Happenings

It’s been a bit since my last check in, so I decided to make this a picture heavy post to catch you up…a picture is worth a thousand words, right?

Recent Eats

We finally have a bunch of perfectly ripe avocados, which means I got to indulge in one of my favorite breakfasts – avocado toast! My secret for the best avocado toast? I spread coconut oil on the bread before throwing it in the toaster oven. This is a great way to extra flavor, crisp it up golden brown, and add even more healthy fats. I have to credit one of my besties, Jeannie (who is a registered dietician) for showing me this on a camping trip a year or so ago. Iced matcha tea with with coconut or almond milk and honey continues to be one of my favorite ways to get a mid-morning caffeine boost.

And of course, smoothies continue to be a breakfast staple throughout these hot summer months. This one is a Creamy Cashew Caramel Smoothie. I make it using almond milk instead of water for additional creaminess and protein. Also, if you haven’t noticed yet, we have a HUGE pint glass collection…they are hands down my favorite drinking glasses and we love representing local breweries!

One of the best parts about being on summer break has been having time to finally try all of the recipes I’ve tabbed in our cookbook collection. I’ve been working my way through The Oh She Glows Cookbook (you may remember the Thai Peanut Sauce from this post). On Wednesday night I made Angela’s Creamy Vegetable Curry (yes, we share the same name).

Then, last night I made her Luxurious Tomato-Basil Pasta. We’ve been powering through cashews lately to make all these “cream”- based meals!

Other Life Happenings

I’ve only gotten one more run in this week after Monday’s night run. I did another 3 miles on Wednesday morning.

I also have really been loving my weekly tradition of visiting the Solvang Farmer’s Market every Wednesday. This week it was HOT!

Then last night we headed out for an evening hike once Adrian got home from work along the Midland Trails. We set out to do the Upper Lover’s Lane/Lover’s Loop since it was just short of 4 miles and we were racing the sun. It turned out perfect, we got back to the car just as the sun was setting.

He was HUGE and absolutely adorable! He didn’t seem to be as interested in being my best friend as I was, oh well.

 

Today we’re heading up to SLO to check out a free concert and hopefully stopping in Los Osos for another hiking adventure. Happy Friday everyone!
